Fruit Cake

-1st April 2014-

A nice simple cake, Hands needed, No whisk required.








I double for big one!!

225g SR Flour
110g Marg
60g Demerara Sugar
50g Granulated Sugar + some to put on top before baking
1 Egg
6 Tbsp Milk
1 Tsp Mixed Spice
220g Mixed Fruit
Glace Cherries







Measure out the butter and flour & rub gently until...

it looks like this all crumbly how the texture of the cake should be.




Measure the rest of the dry ingredients (& cherries) & add them to the bowl.
Break the eggs,

& add them to the measured milk








Pour it in with the dry ingredients,

& mix it all together with a spoon



Add mix to a lined cake tin

Sprinkle sugar on the top and pat it down with a spoon this makes a crunchy top.

All looks good except one thing. "Daddy we haven't used the cherries!"


So I pushed the cherries into the top. (You can add these with your dry ingredients.)
Bake in the oven pre-heated to Gas 4 for approx 75 mins. This one took about 95 as the recipe was doubled. Test with a skewer, will come out dry when ready.

Birthday Cake for My Big Brother

-18th March 2014-




My brother loves the Lone Ranger so me & Daddy are making him a Lone Ranger cake for his Birthday.


Vanilla Cupcakes

Makes 12 -

110g Marg
100g Caster Sugar
125g Golden Caster Sugar
2 Eggs
150g Self-Raising flour
125g Plain Flour
150ml Skimmed Milk
1tbsp Oil
1tsp Vanilla Extract

Measure margerine,

& sugar.

Put them together,

& beat,

for a few minutes,


until pale.

Crack the eggs & give a lil whisk.

Measure the milk & vanilla.

& sift the flour with the salt.


Measure

Beat in 1/3 flour into the butter, followed by 1/3 milk. Repeat until all combined. Pour into cases & cook on Gas 5 for 25 mins.
We are going to decorate the cupcakes,

with fondant sheriff badges.
