Eton Mess Cupcakes & Pancakes


-4th March 2014-

Today I am making Eton Mess cupcakes, me & mummy both ♥ Strawberries & Meringue.
Daddy kindly made me meringues and dried strawberries yesterday whilst I was at pre-school.



Eton Mess Cupcakes

-Makes 12

Sponge-                                                                                                      Eton Mess Buttercream Icing-
70g Marg                                                                                                                                150g Butter
100g Plain Flour                                                                                                           300g Icing Sugar
110 Self-Raising Flour                                                                                           1/2tsp Vanilla Extract
100g Caster Sugar                                                                                                    5-6 Mini Meringues
100g Golden Caster Sugar                                                                                        Dried Strawberries
1tsp Baking Powder                                                                                                                Fresh Mint
1/2tsp Salt
2 Eggs
1tsp Vanilla Extract
Dried Strawberries
2 Mini Meringues

Weighing the butter..

Powdered meringue & strawberries

Whisk flour, butter & sugar...

Add eggs, milk & flour a little at a time

Whisk until light & fluffy

Put the mix in a prepared lined tin & in the oven gas 4 for approx 30 mins & ♥ clean the bowl ♥


Make some buttercream




Decorate with buttercream, meringue, strawberry coulis, dried strawberries & mint.

Easy Peasy Pancakes

Makes 4 Large

110g Flour
2 Eggs
200ml Milk
75ml Water
Butter for cooking

Make a well in the flour, add the eggs and whisk together. 
Combine the milk & water, slowly pour into flour/egg whilst whisking.
Brush the bottom of pan with butter, till fairly hot add a ladle of mix, make sure the pan is evenly coated. When the pancake comes loose, try & flip it as high as possible & cook the other side.


Chocloate Fudge Sauce

150ml Double Cream
1 handful of good quality chocolate calets
1tbsp muscavado sugar

 Melt the chocolate over a bain marie, bring cream to boil and lower the heat, add the sugar and melted chocolate to the cream, stir until combined, cook for a further 2-3 mins.
