A nice simple cake, Hands needed, No whisk required.
I double for big one!!
225g SR Flour
110g Marg
60g Demerara Sugar
50g Granulated Sugar + some to put on top before baking
1 Egg
6 Tbsp Milk
1 Tsp Mixed Spice
220g Mixed Fruit
Glace Cherries

| Measure out the butter and flour & rub gently until... | 
  | 
| it looks like this all crumbly how the texture of the cake should be. | 
  | 
| Measure the rest of the dry ingredients (& cherries) & add them to the bowl. | 
  | 
| Break the eggs, | 
  | 
| & add them to the measured milk | 
  | 
| Pour it in with the dry ingredients, | 
  | 
| & mix it all together with a spoon | 
  | 
| Add mix to a lined cake tin | 
  | 
| Sprinkle sugar on the top and pat it down with a spoon this makes a crunchy top. | 
  | 
| All looks good except one thing. "Daddy we haven't used the cherries!" | 
  | 
| So I pushed the cherries into the top. (You can add these with your dry ingredients.) | 
  | 
| Bake in the oven pre-heated to Gas 4 for approx 75 mins. This one took about 95 as the recipe was doubled. Test with a skewer, will come out dry when ready. |
